B&B Organics sources its Athur Kichdi Samba Rice from organic farmers in Athur district near Salem in southern Tamil Nadu.

Recipe: Athur Kichdi Samba chicken biryani

Ingredients:

1. Chicken pieces – 1 kg
2.
Athur kichdi samba rice – 1 kg
3. Onions & Tomatoes – 250 g
4. Oil/gheeger/garlic paste
5. Chilli powder, coriander powder – 1 spoon
6. Coriander/mint leaves
7. Lemon juice & Salt

Procedure:

1. Soak the rice for 1/2hour. Marinate the washed chicken with salt, curd and coriander mint leaves
2.
In a pressure cooker heat oil/ghee and splutter whole spices
3. Add onions and some more coriander leaves with two green chillies. Saute until golden brown
4. Now add ginger/garlic paste, stir and then add chilli powder and tomatoes
5. Keep stirring until tomatoes become mushy. Immediately add coriander powder, turmeric powder and the marinated chicken
6. Add the lemon juice and check seasoning. The taste should have sharp taste of chilli, salt and lemon
7. Boil for five minutes then measure 5 cups water and pour into the gravy
8. Let the water boil now drain the rice and add. Stir to mix well.
9. Wait until ¾ of water is absorbed and then close lid. Pressure cook on medium flame for two whistles
10. Switch off and wait until pressure cools. Serve the biryani garnished with coriander leaves and curd raita
